Loaded nachos with guacamole

HOW IT'S DONE

1. Preheat the oven to 200 degrees. Slice the avocados and mash together with 1 tablespoon of lime juice, red onion, tomatoes, fresh coriander, Tabasco and salt and pepper to taste. Add extra lemon juice to taste.

2. Heat some sunflower oil in a pan and fry the PLNT 100% plant-based Chicken Chunks Natural on medium heat for 5 – 6 minutes. Add black beans and corn and cook for another 3 minutes.

3. Spread half of the tortilla chips on a baking tray lined with baking paper. Sprinkle half of the cheese (grated) and half of the finely chopped jalapeños. Also, divide half of the chicken chunks mixture over it. Then repeat with the rest of the tortilla chips, jalapeños, and plant-based chicken mixture. Bake for 5 minutes in the oven until the cheese is melted.

4. Remove the tray from the oven and spread the salsa, sour cream and some fresh coriander over it. Serve with the guacamole.
