100% plant-based mexican enchiladas

1. Preheat the oven to 200°C. Drain the black beans in a strainer and rinse.

2. Heat (plant-based) butter or oil in a pan on medium/high. Add PLNT 100% Plant-Based Mince and fry for 6-8 minutes until golden brown. Add the tomatoes, black beans and taco seasoning to the pan and simmer for 5 minutes.

3. Divide the mince over the tortillas, roll up tightly and arrange the wraps in a single layer in the baking dish.

4. Sprinkle the grated cheese over the tortillas and place the baking dish in the middle of the oven. Bake the enchiladas for 25 minutes, until done. And enjoy!
